Cheesy Bacon Potato Skins

Cheesy Bacon Potato Skins are an absolute classic appetizer—crispy on the outside, fluffy on the inside, and loaded with melted cheddar, smoky bacon, sour cream, and fresh chives.

The Secret to Extra Crispy Potato Skins

  1. Bake Twice: Baking the whole potatoes first softens the interior, while brushing the hollowed skins with butter/oil and baking them empty crisps up the skin before you add toppings.
  2. Scrape, But Leave a Border: Leave about ¼ inch of potato flesh attached to the skin. This gives the boat structural integrity so it holds the heavy cheese and bacon without collapsing.
  3. Use Russet Potatoes: Russets have thick skin and a starchy texture that crisps up far better than thin-skinned red or yellow potatoes.

Classic Loaded Potato Skins Recipe

Ingredients

  • 6 medium Russet potatoes (scrubbed clean and dried)
  • 2 tbsp olive oil or melted butter
  • 6 slices thick-cut bacon, cooked crisp and crumbled
  • 1½ cups shredded sharp cheddar cheese (or a cheddar-jack blend)
  • ½ tsp garlic powder
  • ½ tsp salt & freshly cracked black pepper
  • ½ cup sour cream
  • 3 tbsp sliced green onions or fresh chives
1.Initial Potato Bake:High heat creates a fluffy interior.

Preheat your oven to 400°F (200°C). Prick each potato a few times with a fork. Rub the outside lightly with oil and bake directly on the middle rack for 50 to 60 minutes, or until a knife slides easily into the center. Allow them to cool for 10–15 minutes until safe to handle.
2.Slice & Scoop:Leave a 1/4 inch border of flesh.

Slice each potato in half lengthwise. Use a spoon to gently scoop out the center flesh into a bowl (save this for mashed potatoes or potato soup!), leaving a ¼-inch rim of potato along the skin.
3.Butter & Crisp the Shells:Bake empty for maximum crispness.

Increase oven temperature to 425°F (220°C). Brush both the inside and outside of the scooped potato skins with melted butter or olive oil, then season the insides with garlic powder, salt, and pepper. Place skin-side up on a baking sheet and bake for 10 minutes, flip skin-side down, and bake for another 5 minutes until crisp.
4.Load with Cheese & Bacon:

Remove from the oven and fill each cavity generously with shredded cheddar cheese and crumbled bacon.
5.Melt & Serve:Broil for extra bubble and color.

Return to the oven for 4 to 5 minutes (or broil on high for 2 minutes) until the cheese is completely melted and bubbling. Top each skin with a dollop of sour cream and a sprinkle of fresh green onions or chives before serving warm.
