A cozy, hearty one-dish dinner with crispy potatoes, juicy meatballs, tomato sauce, and lots of melted cheese.
Ingredients
-
500 g (1 lb) ground beef
-
500 g (1 lb) potatoes, cut into small cubes
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
½ cup breadcrumbs
-
1 egg
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp paprika
-
1 tsp Italian seasoning
-
2 cups (500 ml) tomato/passata sauce
-
1 cup shredded mozzarella
-
½ cup grated cheddar or Parmesan
-
2 tbsp olive oil
-
Fresh parsley, optional
Method
-
Heat oven: Preheat to 200°C / 400°F.
-
Make the meatballs: Mix beef, half the onion, garlic, breadcrumbs, egg, salt, pepper, paprika, and Italian seasoning. Shape into small meatballs.
-
Prepare potatoes: Toss the potatoes with olive oil, a little salt, and pepper. Spread them in a large baking dish.
-
Bake potatoes: Roast for 20 minutes, turning once.
-
Add meatballs: Nestle the meatballs among the potatoes. Pour the tomato sauce over everything.
-
Bake: Return to the oven for 20–25 minutes, until the meatballs are cooked through and the potatoes are tender.
-
Make it cheesy: Sprinkle mozzarella and cheddar/Parmesan generously over the top. Bake for another 5–10 minutes, until bubbling and golden.
-
Serve: Rest for 5 minutes, then garnish with parsley.
Tip: For extra crispy potatoes, don’t overcrowd the baking dish. You can also add sliced bell peppers or mushrooms to the bake.
