Classic Hobo Dinner

Ingredients

  • 500 g ground beef

  • 3 medium potatoes, thinly sliced

  • 2 carrots, thinly sliced

  • 1 medium onion, sliced

  • 1 bell pepper, sliced

  • 2 tbsp butter

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp dried thyme

  • Salt and black pepper, to taste

  • ½ cup shredded cheddar cheese, optional

Method

  1. Preheat the oven to 200°C (400°F).

  2. Tear off 4 large sheets of heavy-duty aluminum foil.

  3. Divide the sliced potatoes, carrots, onion, and bell pepper between the foil sheets.

  4. Season the vegetables with garlic powder, paprika, thyme, salt, and pepper.

  5. Divide the ground beef into 4 portions and shape each into a loose patty. Place one on top of each pile of vegetables.

  6. Add ½ tbsp butter on top of each beef patty.

  7. Fold the foil tightly around the food, creating sealed packets.

  8. Place the packets on a baking tray and bake for 40–50 minutes, until the potatoes and carrots are tender and the beef is cooked through.

  9. Carefully open the packets—hot steam will escape. Sprinkle with cheddar cheese, if using, and return to the oven uncovered for 2–3 minutes to melt.

  10. Serve straight from the foil or transfer to plates.

Easy variation

For extra flavor, add a spoonful of Worcestershire sauce or a little barbecue sauce to each packet before sealing.
