Serves: 4–6
Prep: 10 minutes
Bake: 20–25 minutes

Ingredients

  • 400 g noodles or spaghetti

  • 4 tbsp butter

  • 5–6 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup milk

  • 1½ cups freshly grated Parmesan cheese

  • 1 cup shredded mozzarella

  • ½ tsp Italian seasoning

  • ½ tsp black pepper

  • ¼ tsp salt, or to taste

  • 2 tbsp chopped fresh parsley

  • ¼ cup reserved pasta water

Instructions

  1. Cook the noodles: Boil the noodles in salted water until just shy of al dente. Reserve ¼ cup pasta water, then drain.

  2. Make the garlic sauce: Melt butter in a saucepan over medium-low heat. Add garlic and cook for about 30–60 seconds, until fragrant.

  3. Add cream: Stir in the heavy cream, milk, Italian seasoning, pepper, and salt. Simmer gently for 2–3 minutes.

  4. Add Parmesan: Remove from heat and stir in 1 cup Parmesan until melted and smooth. Add a splash of reserved pasta water if the sauce is too thick.

  5. Combine: Toss the noodles with the sauce and transfer to a greased baking dish.

  6. Top: Sprinkle with mozzarella and the remaining Parmesan.

  7. Bake: Bake at 190°C (375°F) for 20–25 minutes, until bubbling and golden on top.

  8. Finish: Sprinkle with fresh parsley and let stand for 5 minutes before serving.

For extra garlic flavor: Add ½ teaspoon garlic powder to the sauce along with the fresh garlic.

Optional: Add shredded chicken, cooked shrimp, mushrooms, or spinach to turn it into a complete meal.
