crispy potato pancakes

🥔 Crispy Potato

Pancakes

Golden and crunchy on the outside, soft and flavorful inside—perfect for breakfast, brunch, or a quick snack.

Ingredients

  • 4 medium potatoes, peeled and grated

  • 1 small onion, grated

  • 1 egg

  • 3 tbsp all-purpose flour

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp paprika

  • 2 tbsp chopped fresh coriander or parsley

  • Oil, for frying

Method

  1. Grate and squeeze: Grate the potatoes and onion. Place them in a clean kitchen towel and squeeze out as much liquid as possible. This is the key to crispy pancakes.

  2. Mix: Put the potatoes and onion in a bowl. Add the egg, flour, salt, pepper, garlic powder, paprika, and coriander. Mix well.

  3. Heat the oil: Heat a thin layer of oil in a frying pan over medium-high heat.

  4. Shape: Spoon the mixture into the pan and flatten into thin pancakes.

  5. Fry: Cook for 3–4 minutes per side, until deeply golden and crispy.

  6. Drain: Transfer to a paper towel-lined plate.

  7. Serve: Enjoy hot with sour cream, yogurt-garlic dip, ketchup, or your favorite chutney. 😋

Extra-crispy tip: Don’t make the pancakes too thick, and make sure you squeeze out as much moisture from the grated potatoes as possible.
