Gołąbki (traditional Polish cabbage rolls) are the ultimate comfort food! Tender cabbage leaves wrapped around a savory, meaty, and rice-filled center, all simmered in a rich tomato-based broth until they melt in your mouth.
Here is a classic, foolproof recipe for homemade gołąbki.
Ingredients (Makes about 12–14 rolls)
For the Cabbage Rolls:
-
Cabbage: 1 large head of green cabbage (look for a slightly looser head, as the leaves are easier to peel).
-
Ground Meat: 1.5 pounds of a meat mixture (traditionally a 50/50 blend of ground pork and ground beef, or all pork/beef).
-
Rice: 1 cup cooked long-grain white rice (cooked just until tender, not mushy).
-
Aromatics: 1 medium yellow onion, finely diced, and 2 cloves garlic, minced.
-
Butter: 1 tablespoon (for sautéing the onion).
-
Egg: 1 large egg (helps bind the filling together).
-
Seasoning: 1 teaspoon salt, $\frac{1}{2}$ teaspoon black pepper, and 1 teaspoon paprika.
For the Sauce & Broth:
-
Tomato Sauce: 2 cans (15 oz each) tomato sauce or tomato puree.
-
Broth: 1.5 cups beef or vegetable broth.
-
Butter & Sugar: 2 tablespoons butter and 1 tablespoon sugar (the sugar cuts the acidity of the tomatoes and creates a classic, balanced Polish flavor).
-
Salt and Pepper: To taste.
-
Optional: A splash of heavy cream or sour cream stirred in at the very end for a creamy tomato sauce.
Step-by-Step Instructions
Step 1: Prep the Cabbage Leaves
-
Core the bottom of the cabbage head with a sharp knife.
-
Bring a large pot of water to a boil. Submerge the whole head of cabbage in the boiling water for 3 to 5 minutes.
-
Using tongs, gently peel off the softened outer leaves one by one as they loosen, and transfer them to a plate to cool. Repeat until you have 12–14 large leaves.
-
Use a paring knife to slice down the thick, hard center stem of each leaf so it lies flat and is easy to roll.
Step 2: Make the Filling
-
Melt 1 tablespoon of butter in a skillet over medium heat. Sauté the diced onion for 5 minutes until soft and translucent, adding the minced garlic in the final minute. Remove from heat and let cool slightly.
-
In a large mixing bowl, combine the ground meat, cooked rice, sautéed onion and garlic, egg, salt, black pepper, and paprika. Mix gently with your hands until just combined (don’t overmix, or the meat gets tough).
Step 3: Roll the Gołąbki
-
Lay a cabbage leaf flat on your work surface (stem side facing you).
-
Place about $\frac{1}{3}$ to $\frac{1}{2}$ cup of the meat mixture near the base of the leaf.
-
Fold the bottom of the leaf up and over the filling, fold the left and right sides inward like a burrito, and roll it up tightly to the end. Repeat with the remaining filling and leaves.
Step 4: Layer and Bake (or Simmer)
-
Prep the pan: Preheat your oven to 175°C (350°F). Grease a large baking dish or Dutch oven. Line the bottom with a few leftover, unused cabbage leaves (this prevents the rolls from sticking or burning).
-
Arrange the rolls: Place the gołąbki seam-side down in the dish, fitting them snugly next to each other.
-
Make the sauce: In a bowl, whisk together the tomato sauce, beef broth, melted butter, sugar, salt, and pepper. Pour the sauce evenly over and around the cabbage rolls.
-
Bake: Cover the baking dish tightly with aluminum foil or a lid. Bake for 1.5 to 2 hours, until the meat is fully cooked through and the cabbage is meltingly tender.
Step 5: Serve
Serve hot, spooning plenty of that rich tomato sauce right over the top! They pair wonderfully with creamy mashed potatoes, boiled potatoes, or fresh crusty bread.
