Sliced Baked Potatoes

Crispy Sliced Baked Potatoes (Hasselback Style)

Crispy on the outside, tender and fluffy on the inside, these sliced baked potatoes (often called Hasselback potatoes) make an impressive and delicious side dish. Slicing them accordion-style allows butter, oil, and seasonings to bake right into every single layer.

Recipe Overview

  • Prep time: 15 mins
  • Bake time: 45 to 50 mins
  • Servings: 4

Ingredients

  • The Potatoes & Fat:
    • 4 medium Russet or Yukon Gold potatoes, scrubbed clean and dried
    • 3 tablespoons unsalted butter, melted (or olive oil, or a mix of both)
  • The Seasonings:
    • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
    • 1 teaspoon dried herbs (such as thyme, rosemary, or parsley)
    • Salt and freshly ground black pepper to taste
    • 1/4 cup grated Parmesan cheese or shredded cheddar (optional, added near the end)

Step-by-Step Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Prep the Potatoes: Place a potato on a cutting board between the handles of two wooden spoons or chopsticks. (The handles act as a stop so your knife won’t cut all the way through). Slice the potato crosswise at about 1/8-inch intervals. Repeat with all potatoes.
  3. Fan and Season: Place the sliced potatoes on the prepared baking sheet. Gently fan the slices apart slightly. In a small bowl, mix the melted butter, minced garlic, herbs, salt, and pepper.
  4. Brush and Bake: Brush about half of the butter mixture generously over and into the slices of the potatoes. Bake for 35 minutes.
  5. Crisp Them Up: Remove the potatoes from the oven, brush with the remaining butter mixture (this ensures a super-crispy exterior), and return to the oven for another 10 to 15 minutes, or until the edges are golden brown and crispy and the centers are tender.
  6. Optional Finish: If using cheese, sprinkle it over the tops during the last 5 minutes of baking until melted and bubbly. Serve warm!

Helpful Tips

  • Chopsticks Trick: Using wooden spoons or chopsticks on either side of the potato is the easiest foolproof way to make sure you don’t accidentally slice all the way through the bottom!
  • Serving Suggestion: Top with a dollop of sour cream and fresh chives just before serving for an extra layer of flavor.
